Banoffee pie

 
This pie is the much loved  Kela doodh with cheeni that went abroad and jazzed up pretty darn well there.Bananas mashed in cream with dollop of sugar or jaggery was a common hack meal by desi moms when the kids refused veggies and went on hunger strike. My mom learned another version of this way back in 2006 for her kitty party dessert  and she used to make the same using custard, biscuits and cocoa powder. Today in 2020, with the lockdown firmly in place, when the anxiety does get to you about the looming crisis, this is one of the desserts which will provide some distraction for things out of our hands
lThe real Banoffee pie, the "prim and propah" english version, is best with just few ingredients that one can get hands on.
The soft toffee layer is made by boiling a sealed tin of condensed milk. The other three layers are pretty easy to assemble. 


RECIPE-

Mcvities/ Parle g/ Marie /Nice- 2 separate packets
Fresh Bananas-3 Bananas
Caramel/dulce de leche-1 tin
Cream on top- 1 small tetrapack
Chocolate or coffee syrup- one chocolate bar or two tablespoons of whipped coffee.

First step-
Buttery biscuit base-
crush digestive biscuits in blender and mix one table spoon ghee or melted butter in that..spread it evenly to form a base.
I usually prefer digestive ones, but you can go with Parle g or Marie biscuits too. whatever is 
put it in freezer to solidify for 2 hours.

Second step
Dulce de leché / Caramel-

A sealed condensed milk tin, is to be put in 3/4th water in pressure cooker (mine is 2 litres capacity) for 50 minutes. remove the whistle. keep the flame low. once done, switch off and let it cool down completely. 
I usually put two tins depending on size to make it in bulk and leave it overnight.

BE VERY CAREFUL ,seal while broken hot will cause burns.

spread this on sold biscuit base which is set.






next step is cut Banana in chunks and put that on carame base.

Last step-
Cream-

Amul tetrapack cold whipped by blender or hand will work. set that on banana layer and freeze the whole for two hours. it's ready.

if you don't have any tetrapack cream available then heat the freshly collected malai stock of one week and mix some gelatin powder. pour that on the setup and leave it for 3-4 hours to set. sweeten the cream with sugar powder a bit.

once done either pour some coffee liqueur or dust cocoa powder or shave some chocolate chips on that
